10 Delicious Christmas Breakfast and Brunch Recipes

When planning for Christmas, we may not think much about breakfast. And yet when the big day arrives, it’s so nice to wake up to something special. From gingerbread pancakes to an egg, sausage, and cheese casserole that you mix up the night before, here are 10 Christmas breakfast ideas!

Most of the following recipes take about 30 minutes to prepare and another hour to cook.

  • The oven hash, casserole, and strata are assembled the day before, refrigerated, and baked the next morning.
  • The quiche and salmon in pastry are baked ahead and served the next day, reheated in the oven if you wish.

You can bake most of the above recipes in Pyrex (heat-tempered glass) or ceramic dishes. Remove them from the refrigerator and let them sit at room temperature for about 20 to 30 minutes to reduce the possibility of breakage from the sudden change in temperature when you bake or reheat them.

Best of all, they won’t fill the sink with pots and pans just when you want to wash cranberries, and they won’t monopolize the stovetop when you need it for something else.

1. Sausage and Egg Breakfast Casserole

Eggs, sausage, bread and cheese in one dish! Just mix up the ingredients the night before, then leave a note for the first person up to put it in the oven. By the time everyone is up and coffee is made, breakfast will be ready.

2. Stuffed French Toast 

This stuffed French toast makes for a hearty breakfast with protein or fruit filling! Mix it up for an extra special morning.

3. Anything-Goes Strata

A strata is a type of puffed-up egg casserole made with bread. It’s great because you can prepare ahead plus almost any ingredient goes—such as crumbled bacon or shrimp and sauteed mushrooms or leeks or onions.

4. Oven-Baked Hash 

Here is a great way to cook “home fries” for a crowd without using the stovetop. You can do everything the day before serving but bake it.

5. Christmas Granola

This granola with dried berries and cherries is great in a parfait cup layered with yogurt; serve as a side to an egg dish. Or, serve alone in a cereal bowl with milk or yogurt. 

6. Spinach-Mushroom Quiche 

Quiche is always welcome for a luncheon or light supper. Some crusty bread and a mixed green salad are perfect accompaniments.

9. Salmon Fillet in Pastry 

This elegant dish is a simplified version of a traditional Scandinavian fish pie. Arrange it on a bed of fresh dill, garnish with lemon and orange slices, and slice diagonally. Serve with rye crisp, thinly sliced cucumbers, and grapefruit halves.
